1 (3.35 oz.) package Plant Boss® Southwest Plant Taco Meatless Crumbles
4 Tbsp. neutral oil, divided
2 cups cool water
1 jalapeño, seeds removed, minced
3 Tbsp. red onion, minced
1 tomato, diced
3 Tbsp. cilantro, minced, divided
5 Tbsp. lime juice, divided
Salt and pepper, to taste
3 cups shredded cabbage (green, red, or a combination)
½ bell pepper, thinly sliced
1 large carrot, shredded
- Cook Southwest Meatless Crumbles with 2 Tbsp. oil and the cool water, according to package directions. Keep warm.
- Meanwhile, in a medium bowl, mash avocados. Add jalapeño, red onion, tomato, 1 Tbsp. cilantro and 3 Tbsp. lime juice. Add salt and pepper to taste. Cover and refrigerate until needed.
- In large bowl, toss cabbage, bell pepper, carrot and the remaining 2 Tbsp. cilantro, 2 Tbsp. oil and 2 Tbsp. lime juice. Add salt and pepper to taste.
- Warm tortillas and add cooked Southwest crumbles, cabbage slaw and a dollop of guacamole.
Be the boss: top with cilantro, jalapeño and/or queso fresco.
