Not-A-Chicken & Wild Rice Soup

Ingredients

  • 1 cup Plant Boss Unseasoned Plant Crumbles

  • 2 Tbsp. oil

  • 1/2 cup diced onion

  • 1/2 cup diced carrots

  • 1/4 cup minced celery

  • 1/4 cup flour

  • 6 cups broth

  • 1 cup wild rice

  • 1 tsp. thyme leaf

  • 2 bay leaves

  • 1 tsp. dried garlic (1–2 cloves, minced)

  • 2 cups chopped kale

  • 2 cups milk (plant-based suggested)

     

Directions

    1. Sauté onion, carrot, and celery in oil for 3–5 minutes.
    2. Stir in flour. Add broth, rice, crumbles, and spices.
    3. Bring to a boil then reduce to a simmer.
    4. Simmer for 40 minutes, stirring occasionally.
    5. Add kale and simmer for an additional 5 minutes.
    6. Turn off heat and stir in milk.
