Southwest Tacos with Black Beans and Mango Salsa

  • 2 mangoes, diced

    1 jalapeno, seeded and minced

    1/2 small red onion, diced

    2 Tbsp. cilantro, minced

    1/4 cup lime juice

    1/2 tsp. salt

    3.35 oz. package Plant Boss Southwest Plant Taco Meatless Crumbles

    2 cups cool water

    2 Tbsp. neutral oil

    1 can black beans, drained and rinsed


    Avocado slices for topping


    1. Combine mangoes, jalapeno, red onion, cilantro, lime juice and salt. Chill until needed.
    2. Cook Southwest Meatless Crumbles with water and oil according to package directions until almost done.
    3. Add black beans and finish cooking for 2–3 minutes, until moisture is absorbed.
    4. Assemble tacos on warmed tortillas: Southwest Meatless Crumbles with black beans and mango salsa; top with avocado slices.
