Veggie Not-Meatballs

Ingredients

  • 1 cup Plant Boss Unseasoned Plant Crumbles

  • 2/3 cup hot water

  • 2 Tbsp. tomato paste

  • 2 Tbsp. soy sauce

  • 1 ½ tsp. oregano, dried

  • 1 ½ tsp. basil, dried

  • 1/4 tsp. sea salt

  • 1 ½ tsp. minced garlic, dried (or 2–3 cloves, minced)

  • 3/4 tsp. onion powder

  • 2 Tbsp. nutritional yeast flakes

  • 2 eggs (or 2 Tbsp. flaxseed meal + 6 Tbsp. water, soaked 5 minutes)

  • 1/2 cup breadcrumbs

Directions

    1. Preheat oven to 400°.
    2. Stir crumbles into hot water, let sit for 5 minutes.
    3. Add tomato paste, soy sauce, and seasonings. Stir to combine.
    4. Add nutritional yeast flakes, egg (or flaxseed substitute) and breadcrumbs. Stir to combine.
    5. Form into 1 – 1 ½-inch balls and place on a lined baking tray.
    6. Bake for 25 minutes.
